This quick version swaps in cauliflower rice mixed with creamy coconut milk and cheddar cheese for a smooth \u201cgrits\u201d base topped with garlic shrimp.<\/p>\n<ul>\n<li>\n<div>1 lb shrimp, peeled and deveined<\/div>\n<\/li>\n<li>\n<div>2 Tbsp olive oil<\/div>\n<\/li>\n<li>\n<div>2 garlic cloves, minced<\/div>\n<\/li>\n<li>\n<div>2 cups frozen sweet corn<\/div>\n<\/li>\n<li>\n<div>1 cup chopped onion<\/div>\n<\/li>\n<li>\n<div>3 cups cauliflower rice<\/div>\n<\/li>\n<li>\n<div>1\/2 tsp smoked paprika<\/div>\n<\/li>\n<li>\n<div>1 jalape\u00f1o pepper, seeded and sliced<\/div>\n<\/li>\n<li>\n<div>1 cup spinach leaves<\/div>\n<\/li>\n<li>\n<div>3\/4 cup coconut milk<\/div>\n<\/li>\n<li>\n<div>1\/2 cup shredded cheddar cheese<\/div>\n<\/li>\n<li>\n<div>1\/8 tsp salt<\/div>\n<\/li>\n<li>\n<div>Black pepper to taste<\/div>\n<\/li>\n<li>\n<div>Crushed red pepper flakes (optional)<\/div>\n<\/li>\n<li>\n<div>2 Tbsp chopped fresh basil<\/div>\n<\/li>\n<\/ul>\n<h3>Preparation<\/h3>\n<div class=\"BWB_preparation_list\">\n<ul class=\"BWB_recipe_element_preparation_list\">\n<li class=\"BWB_preparation_list_step\">Rinse shrimp and pat dry. In a skillet, heat 1 tablespoon of the oil over medium heat. Add half of the garlic and the shrimp and cook until the shrimp turn pink, about 3 minutes. Remove shrimp from skillet and set aside.<\/li>\n<li class=\"BWB_preparation_list_step\">In another skillet, heat the remaining 1 tablespoon oil over medium-high heat. Add the corn, onion and remaining garlic and saut\u00e9 for 2 to 3 minutes, or until the vegetables begin to soften. Add the cauliflower rice, paprika, jalape\u00f1o, spinach and coconut milk and stir. Reduce the heat to medium low, cover and cook for 5 minutes. Stir in the cheddar cheese and cook until the cheese is melted, about 2 minutes.<\/li>\n<li class=\"BWB_preparation_list_step\">Remove the skillet from the heat. Season with the salt and black pepper to taste.
