Instead of eating chili with meat in it, try making this extremely healthy vegan chili! It&#8217;s delicious and still gives you the &#8220;comfort&#8221; food satisfaction that we all enjoy.<\/p>\n<p>Check out the recipe provided by <a href=\"https:\/\/www.epicurious.com\/recipes\/food\/views\/vegan-chili-51216410\">epicurious.com<\/a> below!<\/p>\n<p><strong>YIELD Serves 6 to 8 <\/strong><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>1 tablespoon sunflower oil<br \/>\n1 medium yellow onion, diced<br \/>\n1 cup shredded carrots<br \/>\n1-2 jalape\u00f1o peppers, stemmed, seeded, and minced<br \/>\n3 garlic cloves, minced<br \/>\n1\/2 cup bulgur, rinsed<br \/>\n2 tablespoons chili powder<br \/>\n1 tablespoon ground cumin<br \/>\n2 cups diced fresh tomatoes (about 2 medium or 6 plum tomatoes)<br \/>\n1 1\/2 cups tomato sauce<br \/>\n1 (15-ounce) can kidney beans, drained and rinsed<br \/>\n1 1\/2 (15-ounce) cans black beans, drained and rinsed<br \/>\n1 1\/2 teaspoons kosher salt, or to taste<br \/>\nChopped fresh cilantro<\/p>\n<p><strong>PREPARATION:<\/strong><\/p>\n<p>1. Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the onion, carrots, and jalape\u00f1o and saut\u00e9, stirring often, until the onion is soft and translucent, about 5 minutes. Add the garlic and saut\u00e9 for 1 minute. Add the bulgur, chili powder, and cumin and stir until well combined.<br \/>\n2. Stir in the tomatoes, tomato sauce, and beans. Bring to a boil, then reduce the heat, cover, and simmer, stirring occasionally, until the beans are tender, about 1 hour. Season with salt to taste.
