To make it, they would need to blend several types of non-genetically modified heirloom seeds, which are usually family-owned\u00a0and difficult\u00a0to get your hands on.<\/p>\n<div class=\"widget widget-dfp gam widget-inject widget-inject-centre\" data-id=\"909201\" data-widget=\"41\" data-per=\"20\" data-min=\"400\" data-path=\"\/21842630800\/NET_Inline1\" data-lazy=\"true\" data-targeting=\"[]\" data-dim-m=\"[300, 250]\" data-dim-t=\"[300, 250]\" data-dim-d=\"[300, 250]\" data-size=\"[300, 250]\">\n<div class=\"slot slot-widget slot-is-empty\">\n<div id=\"google_ads_iframe_\/21842630800\/NET_Inline1_1__container__\">\u201cIf you call it the seed bank, which I did \u2014 every single one in the country \u2014 they only release one- or five-pound bags of seed to you,\u201d said Clark, who is now vice president of operations at Widow Jane. \u201cSo you have to get started on a small scale, and that&#8217;s what we did.\u201d<\/div>\n<\/div>\n<\/div>\n<p>It took three years of planting in a field owned by farmer John Gill in Hurley, N.Y. to create the new\u00a0blend.\u00a0Gill agreed to use two fields for experimentation, planting two varieties of corn called Bloody Butcher and Wapsie Valley\u00a0and allowing\u00a0them to cross-pollinate, thereby creating the ideal mixed kernel.<\/p>\n<p>\u201cThere was this beautiful sunburnt orange color that had been created between the two fields,\u201d Clark said. \u201cSo we plucked those kernels off that corn, put it in a paper bag, and from that moment on, there was no doubt about what the name of this strain was gonna be. To make bourbon whiskey, distillers take grain (usually consisting of corn and other grain products) and make a mash, introducing yeast and water at high temperatures and letting the mixture ferment into alcohol. The new Baby Jane is available for $50 per 750mL bottle, and Jevremov\u00a0believes\u00a0it\u2019s one of the best-value bourbons on the market, given its quality and the care that goes into its bottling.<\/p>\n<p>The\u00a0new bottle is custom-made, with a beautifully ridged neck that mimics the cladding on New York water towers. The label purposefully doesn&#8217;t wrap around the whole bottle,\u00a0sneakily revealing a design through the glass:\u00a0the abandoned\u00a0limestone mines in Rosendale, N.Y., where Widow Jane sources their water.<\/p>\n<div class=\"widget widget-dfp gam widget-inject widget-inject-centre\" data-id=\"909204\" data-widget=\"41\" data-per=\"80\" data-min=\"400\" data-path=\"\/21842630800\/NET_Inline2\" data-lazy=\"true\" data-targeting=\"[]\" data-dim-m=\"[300, 250]\" data-dim-t=\"[300, 250]\" data-dim-d=\"[300, 250]\" data-size=\"[300, 250]\">\n<div class=\"slot slot-widget slot-is-empty\">\n<div id=\"google_ads_iframe_\/21842630800\/NET_Inline2_1__container__\">And how does Baby Jane taste? In a word: complex.<\/div>\n<\/div>\n<\/div>\n<p>Most whiskeys have monotone tasting notes, Clark\u00a0explained, but with Baby Jane, the notes are more dynamic.<\/p>\n<p>\u201cEven with the tasting notes, there&#8217;s complexity,\u201d she said. \u201cLike: it&#8217;s peach compote, or it&#8217;s cafe au lait, &#8217;cause it&#8217;s peach that&#8217;s been cooked down and caramelized, or it&#8217;s coffee that has this creaminess to it. Or it&#8217;s a soft pretzel,\u00a0chewy with salt on top, you know?
